Gourmand: Blueberry Ice cream

 

Blueberry Ice cream

Ingredients ………………………………………………………………………………………………………

  • 3 large egg yolks
  • 180 g sugar
  • 350 ml heave cream
  • 200 ml milk
  • 350 g fresh berries

Directions ………………………………………………………………………………………………………

  1. Mix the yolks and sugar until pale.
  2. In a saucepan bring to the medium heat bring cream and milk to boiling point.
  3. Add egg yolks, combine well and cook at a medium heat until the mixture becomes thick.
  4. Remove from heat, let cool at room temperature and add the berries.
  5. Mix well, pure into the container and freeze.
